Weekly Meal Plan #2

It's finally September and autumn is just around the corner - my absolute favourite time of year! Yet again I am sneaking a couple of hearty meals into our menu, and I will also be making homemade soups to have for lunch every day, and some crumbles for dessert. Yay for comfort food!

Our favourite meal from last week was the vegetable chilli - it was so easy to make, and absolutely delicious. Jono event declared it to be one of the best things I've ever cooked! We didn't end up having the lentil and potato curry because we had actually run out of lentils, so I will be making it this week instead!


So here's what is on our menu this week:

MONDAY - Shepherd's pie + veg

TUESDAY - Linda McCartney sausages, cous cous + veg

WEDNESDAY - Pesto tortellini + veg

THURSDAY - Lentil and potato curry + rice

FRIDAY - Fajitas

LUNCHES - Homemade carrot + lentil soup or tomato soup

I don't tend to meal plan our weekends because I like things to be a bit flexible - we often miss a meal in the week, or eat out on Saturday, so things usually even out. Sometimes we'll have left overs, and I always keep jars of pasta bake sauce in the cupboard, and fish fingers in the freezer, just in case we need an extra meal!
