RECIPE | Festive Mincemeat Cinnamon Rolls

I really don't think there's anything better than the sweet, gooey goodness of a cinnamon roll. They are one of my favourite treats, and I was so excited to spot a really simple, cheat recipe for them on Carrie's blog One Pleasant Day last month. I have adapted her recipe to create a festive version by using mincemeat as well as cinnamon sugar, making them perfect for Christmas. In fact, we will be having them on Christmas Day morning teamed with a glass of bucks fizz; I think they will be the perfect accompaniment to present opening.


You will need:

1 pack ready rolled puff pastry
50g cup butter
50g light soft brown sugar
1 tbsp cinnamon
1 cup mincemeat
Icing sugar

Method:

1. Preheat your oven to 180 degrees or gas mark 6.

2. Melt your butter - I do this in the microwave but feel free to do it on the hob, or however else you fancy. Stir in the sugar and cinnamon.

3. Heat your mincemeat - again I do this in the microwave, I find that warming it up a little helps it to spread on the pastry, which ensures you get a nice even layer.

4. Unroll your pastry so that it is lay flat on the counter, and start by carefully spreading over your sugar mixture. Once you've done that do the same again with your mincemeat, making sure you fill it right to the edges.

5. Starting at one of the shorter edges roll up your pastry with the filling on the inside like a big swiss roll. Wrap it up in clingfilm and stick in the fridge to cool, as this makes it a lot easier to cut. I actually popped mine in the freezer for 10 mins as I was impatient and it worked perfectly.

6. Slice the roll into inch thick slices, and pop them onto a baking tray, and then into the oven for 15-20 minutes, but do keep an eye on them and take them out once the pastry is golden brown.

7. Mix the icing sugar with cold water to create a glaze, and drizzle over your rolls. I have no measurements for this as you can mix them to your own preference - I like mine quite thick. They are best served warm, and if you need to heat any leftovers just pop the rolls into a bowl and heat for 30 seconds in the microwave.
