This week marks my eighth week on Slimming World, and Jono's third week as a vegan for lent! I've been having lots of fun finding new recipes to try, and it's been surprisingly easy to find meals that cater for us both. I think that even after lent is over we will still eat a few vegan meals each week, as we've found it's a great way to get some extra veg into our diet!
This week's menu:
MONDAY - Vegetable + bean 'cottage pie' with greens
TUESDAY - Linda Mccartney sausages, sweet potato mash + roasted vegetables
WEDNESDAY - Pesto pasta with tenderstem broccoli + lemon
THURSDAY - Vegetable + bean tacos with chips
FRIDAY - Quorn fajita mix + rice
